1 whole Sea Bass Can substitute with other fishes
1 Lemon
1/2 Cup Sun Dried Tomato Optional
2 Tablespoon Oliver Optional
2 Teaspoon Thyme
2 Teaspoon Capers Optional
2 Teaspoon Dill
1 Tablespoon Parsley
1 Tablespoon Rosemary
1-2 Tablespoon Oliver Oil Extra Virgin Oliver Oil would be better
1 Teaspoon Sea Salt
1 Teaspoon Black Pepper

Mediterranean grilled whole fish is their signature dish for summer time. I had the dish a few times at Greek restaurants, and always want to remake it at home. This recipe originally came from one of my friends. He studied and worked in Japan and Europe for many years, and since he loves cooking and enjoys good food, he studied and mastered Japanese, Mediterranean, and French cooking. I actually wanted to try his recipe for a long time, but didn’t have time and energy to cook that. Finally on labor day long weekend, I had time to do some shopping and cooking.

This dish is very easy to prepare and only take 20 minutes to cook it. I have to send gratitude to Costco, since they always have high quality food. The sea basses I bought from Costco are so fresh and absolutely delicious.

I have to admit that I love Mediterranean dishes, especially love their simplified cooking style. At most time, you just need sea salt, black pepper and Oliver oil, all you really need are the fresh ingredients, and the flavor naturally comes out from the ingredients, no additional sauce needs to cover the original taste.

Lemon is also a very important ingredient for Mediterranean food which you can’t substitute.

The aroma of grill fish is an alluring one. It can be your signature dish to impress your guests.

Tips:

  1. You need to make sure using paper towel to dry the fish completely, otherwise it will be very fishy.
  2. This dish can use a grill rack as well.

Sprinkle the fish with sea salt and black pepper inside and out. Also drizzle the fish inside and out with extra virgin Oliver oil. Marinate about 15 minutes.

Pat dry the fish with paper towels. Use your hand to brush on Thyme and Dill inside and out to add a layer of additional taste.

Chop Sun dry tomato, Oliver, Parsley and Rosemary, and put inside the fish belly. Slice a half of the Lemon, put inside and outside on the top of the fish.

Evenly grease Oliver oil on a baking dish, and then place the fish to the baking dish. Squeeze the other half of lemon for the juice and drizzle on the top of the fish. Chop the capers and put on the top of the fish as well.

Preheat oven to 395 F. Drizzle the remaining Oliver oil to the top of the fish. Bake the fish about 20 minutes.
